30 Days of Gratitude – Day 14

Delicious Gluten-Free Food

My 8th year anniversary for going gluten-free is coming up next month! It was depressing back then to realize there wasn’t an easy swap for some of my favorite foods – like pasta, pizza and bread!  No Whole Foods Market or Trader Joe’s nearby and only the more expensive local grocery store had a few things but boy did they taste awful.

I’m allergic to wheat and before I figured it out (yes, me – not the doctors) I was prescribed an Epi-Pen since my IG-E levels were so high and they didn’t know what was causing it.

Thankfully, there are so many GF foods on the market now and many are quite delicious!  I’m grateful that local grocery stores like Food Lion, Walmart and Farm Fresh have a variety of these products.

Today I am grateful for:

  • Utz Gluten-Free Chips – especially my new favorite – Multi-Grain Tortilla chips OMG these are so very good!
  • Udi’s white bread
  • Rudi’s tortilla wraps – I can eat sandwich wraps for lunch
  • Whole Foods – the most delicious Sweet Cream Biscuits, Cheddar Biscuits, Cornbread and Sandwich Bread – all very yummy
  • Ancient Harvest Quinoa Pasta – tasty and good for you 

I’m also very thankful that I never had to use the Epi-Pen!

  1. I am grateful for my coffee. That is about it for right this instant. I have a friend with celiac disease so I know what you mean sort of about gluten free food. I am so glad to see it everywhere now so that it is easier to find foods to eat and not have to reinvent the wheel. Have a super day today and enjoy those chips. I meant to comment on yesterdays post about friends. I am thankful for my friends. I don’t have many close friends but the ones I do have I love dearly. Have a super duper day! I’m thankful for you my 1st WP friend. 🙂
